We have had several tasty local meals this week, but I had to share this recipe. It can be eaten for breakfast, lunch, dinner, or dessert! YUM. Have I mentioned I love my husband? He has made this cobbler with peaches, berries, a mixture of fruits – and every time it has been divine. Enjoy…
Filling.
Ingredients.
- 6 c sliced fruit or berries
- 3 T flour
- 1 c sugar
- 3/4 t salt
- 3 T (1.5 oz) butter
Steps.
1. Stir together the flour, sugar, and salt.
2. Toss the mixture gently with the fruit, and pile it into a buttered baking dish.
3. Chop the butter into small pieces and sprinkle them over the fruit.
Topping.
Ingredients.
- 1.5 c flour
- 1/4 c sugar
- 1 t baking powder
- 1/2 t salt
- 1 stick (4 oz) butter
- 1/4 c milk
- 1 egg
Steps.
1. Preheat oven to 425F.
2. Combine the flour, sugar, baking powder, and salt.
3. Cut the butter into 1″ cubes.
4. Cut butter into the flour mixture until it resembles coarse meal.
5. Add the milk and egg to the flour mixture, and mix until just combined.
6. Drop the mixture over the fruit, tablespoon by tablespoon, leaving openings around each part of the batter.
7. Place in the oven with a sheet pan underneath the dish (to catch juices).
8. Bake 35 to 45 minutes, or until juices are bubbling and crust is golden.
Notes.
1. This would probably be a great recipe in a solar cooker.
2. For vegan readers, we’ve made this recipe vegan by substituting the butter for margarine or oil, eliminating the egg, and using soy milk. You might have to tweak it a bit, but it is tasty!

I loves me some cobbler. Easy to make, easy to eat! Great job Matt – matt can move down here?
Since its snowing here today… that warm tray of goodness is an absolute wonder to behold.
Kind Regards

Hi Melinda
Greeting from rural France, where I run a blog (completely and entirely non-commercial) called Farm Blogs.
At Farm Blogs I am trying to gather in one place the very best of global blogging about farms, farming and rural life.
You can find the blog roll, sorted by country (and a General Interest section).
My posts are made up of the blog recommendations from farm bloggers and I also post regular stories about world farming.
All blogs have been recommended to me by other bloggers or identified by me during my occassional browsing.
Your old blog, Elements in Time was recommended by Lucy at The Smallest Smallholding http://www.smallestsmallholding.com/ and you can find her recommendation at: http://farmblogs.blogspot.com/2008/08/smallestsmallholding-recommends.html
(If you’d just like to see recommendations please use the label ‘Recommendations’.)
I have a pretty broad definition of farming – if you’re producing food, you’re a farmer, to my mind at least. …

ROB, He’s mine… can’t have him… I found him fair and square!
BELINDA, Ooooh, your home does look cold! Isn’t it nice, though, to have half the world in the opposite season, so that you can view sun all year long? ; )
Funny, my brother tried to make a blueberry cobbler the other day and it didn’t turn out well at all. Maybe I should forward him this recipe!
Oh, my mouth is watering. Could you send me a bit for breakfast? I love it with plain yogurt….
Stephanie, I’ve never seen a cobbler made badly with this recipe!
Purloined, Hadn’t thought to have it with yoghurt. Interesting – a healthy alternative to having it with whipped cream….
